Softening ginger bud is a renowned premium product from Shandong Province, known as a green and healthy food. This unique processed product is made exclusively from ginger buds, which are grown indoors for a short period, free from pests and diseases, and without the use of chemical pesticides. The fast-growing ginger sprouts are rich in nutrients, crisp, tender, and easy to store. **First, Cultivation Techniques**
1. **Selecting Ginger Seeds**: The key is to follow the "four no's and four yes's" principle. First, choose ginger that is not old or rotten. High-quality seeds have about 8 buds per kilogram. Second, avoid seeds affected by pests or diseases. Third, select bright, fresh ginger with clear growth marks, not dark or dry ones. Fourth, pick strong, firm ginger with large, solid buds rather than small, weak ones.
2. **Germinating the Seeds**: Place the selected ginger seeds in a pile, keeping it under one meter high. Keep them moist but not soaked, covering them with sand to retain warmth and moisture. Maintain a temperature around 25°C until most of the buds sprout, but before roots develop.
3. **Planting the Seeds**: Place the germinated seeds on wooden boards, spaced 50 cm apart. Build a bed using bricks and fill it with fine sand that has been pre-soaked. Lay down 4-5 cm of sand at the bottom, then plant the seeds. Ensure the buds are facing upward and keep them closely packed. Approximately 20-25 kg of ginger is planted per square meter. Cover the seeds with another 5 cm of fine sand.
4. **Fine Management**:
(1) **Watering**: Immediately after planting, water the bed enough to moisten the sand and touch the ginger rhizomes. Avoid standing water and maintain 80-90% humidity. Strict control of watering is essential to prevent the shoots from growing too short.
(2) **Temperature Control**: Ideal growth temperature is between 23-30°C. Before and after harvesting, keep the bed temperature at 25-28°C. After harvesting, increase it to 28-30°C until the shoots reach 30 cm, then lower it to around 25°C.
(3) **Ventilation**: After planting, seal the bed to maintain warmth. Once the buds start growing, especially a few days before harvest, ventilate appropriately to improve shoot quality.
5. **Harvesting**: Harvesting too early reduces yield, while delaying it affects quality. Typically, harvest after 40-45 days when the shoots reach about 30 cm. Use a short spade to carefully remove the ginger and then cut the sprouts.
**Second, Processing the Ginger Bud**
During processing, each ginger shoot is manually trimmed. Cut off the top part of the sprouts that are over 30 cm tall, and wash away any soil. Using a cylindrical knife with a 1 cm diameter, press the knife into the ginger block and cut the sprout to create a base of 1 cm in diameter and 2.5-5 cm in length, with a total length of 15 cm. These semi-finished products are then salted and preserved, ready for packaging and sale.
