Spinach Gene Improves Pork Fatty Acids

Japanese scientists extracted the spinach gene and transferred it to pigs in order to improve the fatty acid composition of pork. The implementation of this project confirmed that the plant genes can be normally expressed in animals. In the experiment, the gene that controls the production of saturated fatty acid linolease (FAD2) was extracted from the roots of spinach and placed into pigs' fertilized eggs. From the pigs developed into them, the unsaturated fatty acids in pork increased by about 20 percent. %, the composition of fatty acids is improved. The transferred gene has been steadily inherited between the three generations and about 20 transgenic hogs have been produced. All transgenic pigs are in good health.
